Sesame Shrimp w/ Jasmine Rice

•4oz raw shrimp

•1 serving (45g) Jasmine rice

•120g green beans

•1T Hoisin Sauce

•1 clove garlic

•1T peeled ginger

•15g scallions

•sesame seeds for garnish

Preheat oven to 400, roast green beans in 1/4T oil, salt and pepper. Cook rice. Sautee ginger and scallions, mix into rice and let simmer. Sautee shrimp, remaining oils, ginger and hoisin sauce. Serve over rice, garnish with sesame seeds and enjoy!!

Mexican Chicken and Rice

Mexican Chicken and Rice! This is another delicious way to get lots of micronutrients in your meal, keeping macros reasonable and not sacrificing taste! You can definitely tweak things to make it your own!

•4 oz Organic ground chicken

•50g peppers

•2oz onion

•2oz mushrooms

•40g baby spinach

•150g Riced Cauliflower

•1 serving brown or white rice

Sautee’ ground chicken until almost cooked through, add peppers onions and mushrooms. Sautee’ until tender. Add in cauliflower and cooked rice. 

Season to taste with Mrs. Dash Fiesta Lime seasoning. 

Optional toppings: Reduced fat Mexican cheese, avacado, drizzle of enchilada sauce!
