Quick & Easy Thai Red Curry Chicken

Thai Red Curry Chicken


  • 1 lb Organic Chicken Breast, diced
  • 1/2 Cup Trader Joe’s Red Curry Sauce
  • 1/4 Cup Trader Joe’s Reduced Fat Coconut Milk
  • 8oz Zucchini, Diced
  • 4oz Crimini Mushrooms, Diced
  • 2oz Red Onion, Diced
  • 4oz (one whole) Green Pepper, Diced
  • 1/4 Cup Raw Cashews
  • Salt & Pepper to taste
  • White Rice or Rice noodles to pour over (not included in macros)


  • Cook chicken over medium heat in a large non-stick pan, add in cashews
  • When chicken is almost fully cooked, add veggies.
  • Cook until veggies are tender and chicken is cooked through
  • Add red curry and coconut milk and let simmer for 10 minutes on low-med heat
  • Pour over a bed of rice or rice noodles!

Serves 6 (4 if you want a bigger portion!)
