Manicotti

This dish is the perfect change up your dinner’s need! Protein packed and a great dish to eat off all week! Pair this recipe with a fresh salad!

 

Ingredients

  • 1 Pound 96/4 Ground Chicken
  • 1 Medium Onion
  • 2 Cloves Garlic
  • 1.5 Jars Marinara Sauce (I used Safeway organics)
  • 14 Manicotti Noodles
  • 10 oz Ricotta Cheese
  • 1/2 Cup Mozarella Cheese
  • Hanful Fresh Chopped Basil
  • Handful Fresh chopped Parsley

Directions

  1. Preheat Oven to 375 Degrees
  2. Brown diced onion & minced garlic, add chicken until cooked.
  3. In a separate bowl mix ricotta, 1/4 cup mozzarella, basil, parsley and egg. Add Chicken mixture until well combined.
  4. Put the chicken mixture in a ziplock bag, cutting a small tip off of the corner.
  5. Carefully squeeze mixture through each manicotti shell.
  6. Place shells in a 13×9, greased pan.
  7. Cover with marinara sauce
  8. Cover pan with foil and bake for 60 minutes
  9. Uncover, coat with the remaining mozzarella cheese and bake for another 3-5 minutes until cheese is melted.
